chicken and potato casserole

Another variation of using chicken breasts. The inspiration was Natia\'s Ojaxuri with chicken and potatoes. I added some ingredients and I think it\'s worth to try. This dish is full with vegetables, contains fat free sour cream with garlic and is absolutely delicious, fancy and creative one for dinner. The good thing is that, you can add the vegetables that you have in your fridge or take out the ones that you don’t like.

chicken and potato casserole Directions

  • • 3 pieces of chicken breast
  • • 4-5 medium sized potatoes
  • • 1 medium sized onion
  • • 4-5 baby carrots
  • • 4 cloves of garlic
  • • 10 cherry tomatoes or one full tomato cut into cubes
  • • One cup of frozen peas
  • • Cheese for topping
  • • 3 t/s sour cream
  • • 2 bay leaves
  • • 2 t/s olive oil

  1. • Boil chicken breasts for 10 minutes, drop the bay leaves in it
  2. • Boil potatoes that are cut into pieces in the separate water. You can peal or not your potatoes. (I didn’t, as I love with the skin)
  3. • Spread some oil in the pan that will go in the oven
  4. • Cut already boiled chicken breast into pieces
  5. • Slice onion and lay them on the bottom of the pan
  6. • Add chicken, potatoes, tomatoes and carrots ( don’t forget salt and pepper)
  7. • Put it in the oven for 10-15 minutes
  8. • Mix in the bowl sour cream, 1 or 2 cups of water or chicken broth ( you can use the one where you boiled the breasts, it has good bay leaf flavor) crushed or grated garlic, salt, pepper and peas.
  9. • Take the casserole out and pour sour cream mix on top
  10. • Put the dish back in the oven for 20-25 minutes on 300 degree.
  11. • Spread some cheese on top
