Bean soup

Beans have significant amounts of fiber and soluble fiber, with one cup of cooked beans providing between nine to thirteen grams of fiber. Beans are also high in protein, complex carbohydrates, folate, and iron. Beans were an important source of protein throughout Old and New World history, and still are today. I remember after Georgia became independent country and there was depression period, these great tasting grains saved lots of people from hunger. As many of great products such as tomatoes, corn and potatoes, beans were also discovered by Christopher Columbus while exploring America. Anyway, this is the product that is widely spread in Georgia and every part of the country has their original, delicious recipes. One of them is soup with beans. Here in America, you don’t need to cook beans for two hours as there are all different varieties of beans already cooked and canned for you, though I love cooking them for two-three hours on a very low temperature, so that they are soft and even the skin is melting in your mouth. Those who want to use the canned beans.

Bean soup Directions

  • Two cans of any kind of beans (not sweet), red Kidney beans are the best for it
  • 8 cups of water
  • 4 medium size potatoes
  • 1 medium size carrot
  • 1 cup of crashed tomato or marinara sauce
  • 1 small onion
  • 1 tea/s fenugreek (ucxo suneli)
  • 1 tea/s safflower ( kviteli kvavili)
  • 1 tea/s coriander
  • 1 tea/s paprika
  • 1 cup of chopped fresh cilantro leaves,
  • 1 cup of fresh basil leaves
  • Salt
  • 2 table/s of oil

Wet 1 box ( 1 pound) of uncooked beans overnight and then cook it for an hour. When they are soft and open, they are ready. You can take some beans out from the pot and keep them in the separate containers refrigerated and use them next time so that you don’t need to boil again.

Leave enough amount for the thin soup

Peel potatoes and cut them into small cubes, drop them in the pot with beans and keep cooking in a medium temperature, when it boils, reduce the heat and let it simmer

When the potatoes are cooked (in 20 minutes) add carrots and onions, cook more10 minutes

Add crushed tomato, basil, cilantro and all the spices together with salt.

Add oil and turn the heat off
