One of the most popular summer dishes in Georgia, delicious, tasty, full with colors, taste and vitamins. Easy and fast to make (takes 40 minutes all together) and the result will make you delighted and happy. You don’t even need to eat meet to feel satisfied and your kitchen will smell just mouthwateringly delicious (just made it for my daughter and she is the happiest girl). The best season for cooking the dish is late summer and early fall, when all local vegetables are around the town, when the local farmers have their stands full with colorful tomatoes, eggplants, bell peppers, onions, potatoes and fresh and aromatic herbs.
